Probiotic Protein Bread

Made with Greek yoghurt and cottage cheese this naturally gluten free bread ticks all the neurotransmitter boosting boxes. Both brain calming and focus lifting, this small loaf is full of fibre, filling and works well with sweet and savoury toppings.

Ingredients:

2 1/2 cups of organic oats (we love Flahavans)

2 eggs

1/4 cup of pumpkin seeds

1/4 cup of sunflower seeds

1/4 cup of goji berries

1 tablespoon of Greek yoghurt 10% fat

1 cup of cottage cheese

Pinch of sea salt flakes

Teaspoon of fennel seeds

Teaspoon of thyme

Teaspoon of baking powder

Method: combine all the ingredients in a mixing bowl and leave for five minutes so the oats can absorb a lot of the liquid. Meanwhile preheat the oven to 170 degrees and line a loaf tin with baking paper. Spoon the bread mix in and shape to a smooth loaf. Bake for 45 minutes and leave to cool.

Enjoy with eggs, cream cheese and cucumber, jam and/or nut better.

Keep wrapped in the fridge and reheat slices either in toaster or oven.
