Baked Oats
I can’t believe that this recipe, which I revisit more often than any other is not yet here on the website for you! There are many variations but I will stick with the most popular.
Ingredients to fit one large ramekin:
2 tablespoon of organic oats
1/2 tablespoon of organic chia seeds
1/2 tablespoon of mixed seeds
1 banana
1 teaspoon of nut butter (optional)
1 teaspoon of vanilla essence
Teaspoon of raisins or goji berries
1 Cup of whole or plant milk
Choice of berry for the top - blueberries, blackberries &/or raspberries.
Method: Preheat the oven to 180 degrees and put a large ramekin on an small oven tray. Mash the banana into the bottom of the ramekin, cover with the dry ingredients and give a little mix. This is the point at which to add a blob of nut butter. Then on top the milk and vanilla so that the milk just covers all the dry ingredients. Before you put in the oven add a sprinkle more seeds and choice of berry. If you prefer your fruits uncooked just add when you take out of the oven. Back for a good 30 minutes.
You can prepare the ingredients the night before and put in the fridge so it is ready to bake whilst you get ready in the morning. This also makes a great kids tea. You can eat straight from the hot ramekin but I like to scoop out into a bowl and add lots of extra milk! I also like adding orange zest and a dollop of cream - coconut cream is delicious and so indulgent!
Added protein options: protein powder in the dry ingredients or an egg mixed with the milk and wet ingredients. Finish with nuts on the top.
Not a banana lover? Use cooked apple or mashed berries for the base.
