Special Fried Rice
The simplest but most satisfying dish that feeds the microbiome and packs a choline punch for working memory, mood and cognition.
Ingredients for 1:
2 cups of cold basmati rice, cooked the day before!
3 eggs (firm tofu for vegans)
4 stems of tenderstem broccoli, chopped
Handful of pumpkin seeds
Dark soy sauce or tamari
Teaspoon of butter
Method:
Rinse & chop up the broccoli, put in a non stick frying pan on medium heat and throw the rice on top with a splash of water, heat right through slowly.
The rice you are using is leftover and has been in the fridge (*keeps in tupperware for three days). This gives you resistant starch which feeds gut bugs, supports neurotransmitters but does not elevate blood sugar.
Once the water has evaporated add butter and throw in your 3 eggs mixed together. Move around the pan until it is completely scrambled, then mix with veg and rice.
Take off the heat, into a bowl, add your soy sauce and seeds.
