Sausage & Bean Meatballs

These are protein packed, simple & great on a budget - uni students this one is for you!

Ingredients for 2:

1 packet of sausage meat

1 lemon (zest)

1 packet of breadcrumbs - for dusting

1 tin of butter beans

1 clove of garlic

1 tin of chopped tomatoes

1 tube of tomato puree

Basmati rice (2 cups)

Method: grate the zest from lemon into the sausage meat, season with salt and pepper. Roll into bite size balls and dust with breadcrumbs.

Fry on highest heat so they brown and put in hot oven, 190 degrees, for 10 minutes. Whilst in the oven cook your butter beans with tomatoe ingredients, just one table sppon of puree, and fine grated garlic. Blitz with handheld blender till smooth. Cook rice as per packet instructions or warm ready made in microwave and serve meatballs with sauce all over the top.
