Warm Butter Bean & Kale Salad

Warm kale with chunky butter beans and quinoa is a great way to transition from Summer to healthy Autumnal vibes. In this recipe I focus on an even split of fibre, protein and natural fats whilst boosting our B vitamins and folate to nourish the ND brain.

Ingredients for two:

Bag of chopped kale

Handful of chopped mature cheddar or DF alternative

1 small apple chopped in cubes

Handful of cherry tomatoes sliced in half

Handful of mixed savoury seeds

Tin of butter beans

1 Avocado

2 Cups of quinoa (cooked or quick pack cooked from Merchant Gourmet)

1 Cup of finely chopped celery, cucumber & stoned olives

Zest of one lemon.

Dressing: extra virgin olive oil, apple cider vinegar, seasoning, teaspoon of mustard of choice and lemon juice.

Method: Warm the kale by sauteing in a splash of water and lemon zest, add butter beans and quinoa with seasoning. Take off the heat and stir in all other ingredients in a salad bowl, tossing in the dressing and sprinkle seeds before serving. You will feel the goodness with every mouthful, and the brain sparkling.
