Apple & Blackberry Super Seed Crumble
Delicious but much healthier! Seasonal fruit packed with extra spice & crumble topping with extra fibre, natural fats & protein. I like to suggest having batches of apple and blackberry compote in the freezer so you can then make this crumble through the year, as well as using the fruit with yoghurt and granola for breakfast. I don’t add any sugar to my fruit but if you like it sweeter or have small children that need it I would cook your fruits with some raisins.
I like to add All spice, cinnamon, ginger and/or turmeric - I will leave you to put together the amount you need and spare for the freezer.
Below is my crumble recipe to top your fruit, double the recipe for a larger dish.
Crumble topping ingredients (20cm by 30cm dish):
1 Cup of oats
1 Cup of mixed seeds (I use M&S which has 8 seeds)
1 Cup of ground almonds
2 Cups of buckwheat flour (naturally GF)
2 Cups of soft brown sugar
2 Cups of unsalted butter at room temperature
Method: put the seeds and oats in a nutri-bullet so that you can make a flour. Bring the ingredients together, massaging butter with flour, and pour an even layer over your fruit. I like a light later but my family likes a thick layer so I pop the odd berry at one end to remind me where the thicker end is! Bake for 30 minutes with foil covering and 30 minutes to brown the top of the crumble. Healthy enough to have leftovers for breakfast, as I have in the first picture.
