Miso Tofu & Beetroot Stir Fry

Iron is a key nutrient for neurotransmitter support and tofu has 5mg per 100g, which is the amount you will eat for one person in this recipe. In addition you have the beetroot and seeds to uplift this number. Tofu carries flavour well so this miso soy marinate will make it a taste sensation!

Ingredients for two:

1 Packet of pre cooked small organic beetroots

1 Box of Tofoo co naked tofu (280 grams), chop into large cubes.

1 Small bags of snap peas

1 Handful of savoury seeds & peas

1 Small bag of tenderstem broccoli (chopped in half)

2 Tablespoons of tahini from Belazu

Marinate: 3 tablespoons of soy sauce, 1 tablespoon of honey, 1 tablespoon of white miso paste, 3 tablespoon of warm boiled water, whisk to a loose sauce. Marinade the tofu cubes for an hour.

Method: stir fry the tofu in coconut oil for 3 minutes on high so the edges catch and add the green vegetables, cook for a further 5 minutes. Separate into two portions and add the beetroot, seeds, and drizzle tahini across the top. Simple and totally yummy.
