Puffed Quinoa Cubes

If, like me, you are a dark chocolate fan, you will not be able to get enough of these! Incredibly easy to make, cute in bowls for supper parties and good study buddies. Dark chocolate is a great source of magnesium, copper and fibre.

Ingredients:

2 cups of puffed quinoa

2 bars of 85% Organic Dark Chocolate (200g)

1/2 cup of pumpkin & sunflower seeds

Teaspoon of vanilla extract

Teaspoon of odourless coconut oil

Optional tablespoon of raisins or dried blueberries

Method: break up the chocolate and warm up with the coconut oil using bain marie method. Stir in and combine the dry ingredients. Line a sided tray or loaf tin with baking paper & pour in your mix, press down and put in the fridge till totally set. Cut up into cubes and keep in the fridge for up to a week.
