Fall Fudge (GF)

All the Autumnal feels from a healthy take on fudge with pumpkin, peanut butter, spice & pecans. A great snack before homework or to power your afternoon with 5 grams of protein per cube.

Ingredients:

1 Cup of smooth peanut butter (we love Mani Life)

1/3 Cup of pumpkin puree

4 Tablespoons of maple syrup

1 Teaspoon of vanilla essence

1 Teaspoon of All Spice

1/2 Cup of ground almond

1/2 Cup of buckwheat or oat flour

1/2 Cup of mixed seeds & dried fruits including goji berries

Handful of pecan nuts (broken up in pieces)

1 Bar of 85% Green and Blacks dark chocolate (90 grams)

1/2 teaspoon of coconut oil

Method: Combine all the ingredients in a mixing bowl until so thick you can hardly mix, whilst holding back just a handful of the seed mix, chocolate & coconut oil. Press a 5mm layer of your ‘dough’ in a small tray lined with baking paper and smooth using the back of a spoon coated in coconut oil. Put in the fridge to cool and set slightly. Meanwhile melt the chocolate with coconut oil in a small pouring saucepan. Pour over the cool fudge & sprinkle with remaining seed and fruit mix. Refrigerate for two hours before cutting into cubes and storing in glass in the fridge. Will keep in the fridge for three days.
