Mix & Match Salads

These are specifically designed around the nutrient and convenience needs of ADHDers. It helps us to avoid skipping meals or reaching impulsively for something less healthy and supportive for our minds. Reminder here that when hungry we reach for crunchy carbs, like crisps, to pick up our dopamine and blood sugar levels fast. So instead these are super quick, mostly assembly, and pack well for taking to work or in healthy school lunch boxes. They are based on either cooked quinoa or kale (eaten warm or cool) to which you add:

Sliced onion, flaked salmon (shop bought), avocado, chickpeas, pickle, cucumber, peppers, feta cheese & mixed savoury seeds. You could combine everything or break it up into two salads. Your nutrients needs are supported, blood sugar and hunger met with fibre, natural fat and protein.

Dressing is simply EVOO, ACV, French mustard, seasoning, lemon and honey.
